Lemon Pudding Bars

I'm sharing the recipe for these Lemon Pudding Bars over on Nebraska Furniture Mart's blog. I found this recipe in my grandma's recipe box so I knew it would be a winner.

As you all know I'm a Nebraska Furniture Mart fan and their blog has so many great home tips - trend spotting, home decor tips and more. I'll be sharing more quick and easy recipes in the coming months so stay posted!

When I'm not sure what to bake I always turn to my grandma's recipe book. I'm so thankful I have them and can continue to share her love for great recipes.

This recipe for S'More Brownie Bars popped out right away. With the start of Summer right around the corner s'mores are on my mind. That classic camp fire treat is always a winner. And these S'More Brownie Bars take that traditional treat to a whole new level.

I love the fudgy bronies and gooey marshmallow chocolate topping. So good! Give these a try for your next Summer party.

White Chocolate Brownies

White Chocolate Brownies - all the ooey gooey of real brownies, but better!

Jacob and I had an awesome weekend. My parents came to visit so we could celebrate my mom's birthday. It was her weekend so she planned our fun - we visited the Legler Barn Museum, Crown Center and the Hallmark Visitors Center, and BBQ at Danny Edward's. I love exploring KC with them!

Henry was in heaven. When grandma and grandpa are in town he gets non-stop attention and all the ear rubs.



Now, these brownies. They are amazing. It's all the ooey gooey goodness of a brownie but with white chocolate. They are rich but so worth it. My co-workers gave them rave reviews so they are tested and approved.

I wasn't too impressed with the coloring on the top after they baked - but nothing a little chocolate can't cover up. No one will ever know! #alwaysmorechocolate

Make them. You'll be glad you did.

White Chocolate Brownies

1/2 cup unsalted butter, at room temperature
1 cup white chocolate chips
1 can (14 oz) sweetened condensed milk
1 large egg, at room temperature
1 tablespoon vanilla extract
1 teaspoon salt
1 1/2 cups flour
1/4 cup semi sweet chocolate
1/4 cup white chocolate

Preheat oven to 350 degrees. Line an 8x8 baking dish with parchment paper. Set aside.

In a glass bowl or another microwave-safe bowl, combine butter and white chocolate chips and microwave for 30 seconds bursts, stirring between each bursts, until melted and smooth.

Add in sweetened condensed milk, egg, vanilla extract and salt. Stir to combine. Gradually add in flour and mix until combined.

Pour mixture into prepared pan and bake for 25-30 minutes. It will puff up in the middle but once baked it will drop back down. Once set and just barely golden brown around the edges, remove from oven. Let brownies cool in pan for 10-15 minutes before lifting from the pan.

If desired, melt semi sweet chocolate in one dish and white chocolate in another. Drizzle melted chocolate on top of brownies. Allow chocolate to set and brownies to cool completely before cutting into squares.

I first made these bars in 2011 for our United Way Campaign at work.  Part of our fundraising is selling baked goods.  I’ve never heard of an office where food isn’t a very welcome guest.  Tie in fundraising and you have instant success.  I have never ever won a 50/50 drawing (or any other contest for that matter) so I volunteered to bring in baked goods to sell.

I also got caught up on Girls. Any other HBO series I should watch? I've started Veep a couple times but couldn't get into it.

It's so good to be sharing a recipe with you! It's been a busy few weeks with my day job and it hasn't left a ton of time to get all up in my kitchen and blog.

I've made the classic scotcheroo before but I decided to change it up and make it even more peanut buttery and chocolaty. I seriously never tire of this combo. I'm also a sucker for recipes that use corn syrup - it always makes such a chewy dessert.

You could totally mix up this recipe with any cereal you have on hand. Just don't use more than 5 1/2 or 6 cups or cereal to make sure the bars are good and chewy.

Monster Cookie Bars

This recipe makes me like Monster Cookies more than Chocolate Chip Cookies and I realllly like Chocolate Chip Cookies. But these Monster Cookies....no flour so they are super chewy from all the oats and all of the brown sugar, peanut butter and goodies added in. They never disappoint.

I opted to make my favorite cookies into bars. Mainly because I was lazy and partially because I wanted to see how they turned out. Well, they are tasty. Even chewier. I also used Peanut Butter M&M's.

They are all packed up for my co-workers. Because of the oats I think they count as a breakfast bar.

Monster Cookies

1/4 cup butter, softened
1/4 cup butter flavored shortening
3 eggs
1 cup brown sugar, packed
1 cup sugar
1 teaspoon vanilla extract
1 tablespoon corn syrup
2 teaspoon baking soda
1/4 teaspoon salt
1 1/2 cup creamy peanut butter
4 1/2 cup oats
1 package M&Ms (choose your fav - plain, peanut, peanut butter)
1/2  cup semi sweet chocolate chips
1/2 cup butterscotch chips or white chips

Preheat oven to 375 degrees.  Line a jelly roll pan with parchment paper or generously butter pan. Set aside.

Mix together all ingredients, EXCEPT for the M&M’s and chocolate chips, until combined.

Stir in the M&M’s and chocolate chips.  (Save a 1/2 cup of the M&M's and press into dough before baking; makes the cookies a little prettier after baking).

Dump dough into prepared pan and press into pan. Press the remaining M&M’s into the dough.

Bake for 12-18 minutes until light brown. Let pan cool before cutting into bars and serving. Store in an airtight container.

Pumpkin Pie Bars

Jake and I spent the weekend in Nebraska. We got to spend the day with my family and a day with his family. It seemed like a really quick trip but it was nice to see the fam and get out of town for a bit.

I picked a bunch of apples at my parents so there is apple pie in the very near future. I kinda wish someone would come over and slice all the apples though...seems like a lot of work at this very moment.

On to this recipe! It's my first pumpkin recipe of the season! I'm starting out with a super easy one too. I love the crescent roll crust; it's a little buttery and soft. And of course the pumpkin filling is delightful.

I took advantage of our vacation time to bake a few treats, including these Cinnamon Roll Cookie Bars. I'm a  pretty big fan of Cinnamon Rolls anyway so when I saw my fav in a bar WITH cream cheese frosting it had to happen.

I loved these bars. We kept them in the refrigerator because of the cream cheese frosting and I really liked them chilled. The bar is not overly sweet so the frosting make it a perfect treat.

I may or may not have had one for breakfast....cinnamon rolls are breakfast so why aren't these bars?

Who's up for a sugar induced coma? These Snickers Brownies will definitely cause one, but in a good way. I made these brownies for a 4th of July celebration with fiends. Served with burgers/brats, potato salad, fresh fruit, chips, and beer they were a nice sweet treat.

I'll warn you they are very messy and are best served right out of the pan and with a fork. I absolutely love the texture - fudgy brownies, chewy nougat, crunchy peanuts, and creamy caramel....pretty much a snickers bar on steroids.

How about a chewy sugar cookie crust topped with the goodness of S'Mores? Yep. It's good. I'm obsessed with the graham cracker crumble....it's amazing.

I'm kinda of on a S'More kick with these frozen S'More's, and these bars, and then this pizza. I think it's because we are only a couple weeks away from our lake vacation meaning a perfect opportunity to have real s'more by a camp fire. Can not wait!!

Also - every time I think about S'More I play this scene in my head. Oh, Sandlot.

I love that you make this brownie batter on the strove top and it comes together so quickly. Seriously, 5-10 minutes and these suckers are in the oven.

We had such a nice weekend! My mom and aunt came to visit. Aside from just having them here, the highlight was probably bowling. I scored 38 my first game.....obviously won't quit my day job. I'll share more about our family weekend later this week. Lets get to the recipe.

S'more Bars

S'more Bars - made in the microwave! So easy.

Jacob and I did something crazy. We actually went out on a week night. We went to a Jarrod Niemann concert last night. You probably know his song Lover Lover or Drink to That All Night, if you're into country. The venue was close to our house, smaller scene, and $25 tickets so we couldn't pass it up.

Because of Mr. Henry, I escaped work a couple hours early so he would have some play time before we left for the concert. He was excited to see me AND to eat his dinner early.

I'll tell you more about the concert on Friday but until then let's focus on these super easy S'more Bars! They take less than 10 minutes to make and then about an hour to set. Plus, it's made in the microwave so you won't heat up your house.

I also took my first stab at including video in my posts (posted below in the recipe). Give me a few more times to really make them cool, but hopefully you'll love the visual of the baking steps.

S'more Bars

7 or 8 whole graham crackers
2 1/2 cups miniature marshmallows
2 cups semi-sweet chocolate chips
2/3 cup light corn syrup
3 tablespoon butter
1/2 cup creamy peanut butter
3 cups rice krispies

Butter a 9 x 13 microwave safe dish.

Place 6 or 7 whole graham crackers in a single layer on the bottom of the dish. Break up the remaining graham cracker to fill in the empty space. Cover evenly with marshmallows and microwave on high for 1 minute, or until marshmallows are puffed. Set aside to cool.

In a microwave safe bowl, combine chocolate chips, corn syrup, butter, and peanut butter. Microwave on high for 1 minute, stir, and heat additional 30 second bursts until melted and smooth.

Stir in rice krispies. Dump mixture on top of marshmallows. Spread cereal mixture so it covers the marshmallows. Cover and place in the refrigerator to set, about an hour. Cut into squares and serve. Store in airtight containers.
