Fruit Pizza
Seriously why did it take so long to make fruit pizza!?! And, I have another version so you'll probably see another one in the very near future.
I have to admit I did have a piece of this for breakfast because, well, fruit. I just focused on that and not the sugar cookie crust and cream cheese frosting....
Jacob loved this Fruit Pizza too. He proclaimed that I need to make it for our next house guests. So that means it's good and you should make it.
Fruit Pizza
Crust
1 package pre-made sugar cookie dough
Sauce/Frosting
12 ounces cream cheese
1/3 cup sugar
1 tablespoon vanilla extract
Fruit
1 - 11 ounce can mandarin oranges, drained
1 - 11 ounce can pineapple tidbits, drained
3 kiwis peeled and sliced
1/2 lb strawberries, cut into pieces
On a baking sheet or pizza tray, roll out sugar cookie dough and bake according to package directions. Set aside to cool completely before moving on.
In the bowl of a stand mixer, mix together the cream cheese, sugar, and vanilla and until smooth (1-2 minutes). Spread on cooled cookie.
Arrange prepared fruit on top of cream cheese spread.
Best is served right away. The crust will become soft as it sits in the refrigerator, but still tastes yummy after a couple days.
