In honor of Opening Day and the Royals I made sugar cookie bars with the most amazing blue cream cheese frosting.

It seems like just yesterday that Laura, Alison and I were hanging out with our 800,000 friends celebrating the Worlds Series Champs. Kansas City went nuts and it was so fun to see. I know this year is going to be just as exciting.





We had a sports packed weekend. On Saturday, we went to a Sporting Kansas City game. We even got to go on the field while the players were warming up. If you're ever in KC, I highly recommend attending a game. The stadium is amazing with a ton family activities and the best food and drink. Plus - soccer fans are nuts, in a good way.






Now, off to watch the Royals and eat cookies!

Sugar Cookie Bars with Cream Cheese Frosting

Cookies
1 cup unsalted butter, at room temperature
2 cups granulated sugar
4 large eggs
2 teaspoon vanilla extract
5 cups flour
1 teaspoon salt
1/2 teaspoon baking soda

Frosting
2, 8-oz. packages cream cheese, softened
1/2 cup unsalted butter, softened
2 cups powdered sugar
1 teaspoon vanilla extract
Food Coloring
Sprinkles

For cookies, preheat oven to 350 degrees. Line a jelly roll pan (13 x 19) with parchment paper. Set aside.

In a large bowl with an electric mixer, cream butter and sugar until fluffy. Add eggs, one at a time, mixing after each egg. Add in vanilla.

In a separate bowl whisk together flour, salt, and baking soda. Gradually add to wet ingredients and mix just until combined.

Transfer dough to prepared pan. Put a little butter on your hands and press dough into pan evening. Bake for 10-18 minutes, or until golden brown. Allow cookie to cool completely before frosting.

For frosting, beat together the cream cheese, butter and vanilla extract until light and fluffy. Add in the powdered sugar and mix until smooth and fully combined. If using, add in food coloring and mix until Incorporated.

Spread an even layer on cookie bars and add sprinkles. I like to serve these bars chilled. Keep in the refrigerator until ready to serve.
