Monster Cookie Bars
This recipe makes me like Monster Cookies more than Chocolate Chip Cookies and I realllly like Chocolate Chip Cookies. But these Monster Cookies....no flour so they are super chewy from all the oats and all of the brown sugar, peanut butter and goodies added in. They never disappoint.
I opted to make my favorite cookies into bars. Mainly because I was lazy and partially because I wanted to see how they turned out. Well, they are tasty. Even chewier. I also used Peanut Butter M&M's.
They are all packed up for my co-workers. Because of the oats I think they count as a breakfast bar.

Monster Cookies
1/4 cup butter, softened
1/4 cup butter flavored shortening
3 eggs
1 cup brown sugar, packed
1 cup sugar
1 teaspoon vanilla extract
1 tablespoon corn syrup
2 teaspoon baking soda
1/4 teaspoon salt
1 1/2 cup creamy peanut butter
4 1/2 cup oats
1 package M&Ms (choose your fav - plain, peanut, peanut butter)
1/2 cup semi sweet chocolate chips
1/2 cup butterscotch chips or white chips
Preheat oven to 375 degrees. Line a jelly roll pan with parchment paper or generously butter pan. Set aside.
Mix together all ingredients, EXCEPT for the M&M’s and chocolate chips, until combined.
Stir in the M&M’s and chocolate chips. (Save a 1/2 cup of the M&M's and press into dough before baking; makes the cookies a little prettier after baking).
Dump dough into prepared pan and press into pan. Press the remaining M&M’s into the dough.
Bake for 12-18 minutes until light brown. Let pan cool before cutting into bars and serving. Store in an airtight container.
