White Chocolate Fruity Chex Mix
Happy St. Patrick's Day! This day calls for sprinkles, and lots of them!
I'm still in Nashville and having a great time. The next few days are going to be booked solid, but I'm excited to meet new people and take back some great information.
Now back to the treats. I'm a big fan of quick treats that don't need a ton of ingredients and in my world those recipes almost always include Chex cereal and chocolate. I really like the addition of the fruity marshmallows....those little guys are yummy. And the whole container of sprinkles makes it fitting for St. Patrick's Day, or any day really.
White Chocolate Fruity Chew Mix
8 cups rice or corn Chex cereal
24 ounces white chocolate chips
3 cups fruit marshmallows, divided
1/4 cup multicolored candy sprinkles
Pour cereal into a large bowl. Sprinkle with 1 1/2 cups marshmallows. Set aside.
Line cookie sheet with waxed paper. Set aside.
In a microwave safe bowl, microwave chocolate chips on high for 2 minutes, stirring every 30 seconds, until chips are melted and smooth.
Pour over cereal mixture in large bowl and toss (or use spoon/spatula) to evenly coat.
Dump mixture onto wax paper lined cookie sheet and spread out. Immediately sprinkle with candy sprinkles.
Let stand until set, about 20 minutes. Once set, break up big pieces and place in a storage bowl. Stir in remaining 1 1/2 cup marshmallows*. Store in airtight container.
*Add in the extra marshmallows before serving, if they sit overnight the marshmallows to firm up a little. Still tasty, but better to add before serving.
