If you follow me on Twitter, Facebook, or Instagram you probably saw that I was having a blast at Go Blog Social over the weekend. It was the first in-person blog conference I've attended and it was right here in Kansas City! I learned so much, it's crazy. My mind is still kind of all jumbled from all the speakers. I'll be posting a few recaps in the coming weeks to share all my takeaways from the event. On top of all the talented speakers, the organizers of the event and all the sponsors were amazing. I'll tell you more about them too.
But for now, let's get to my new easy to find weakness: chocolate covered gummy bears. Walgreen's started selling them in little boxes for 99 cents. In the past, I've only ever found them at candy stores or gourmet groceries so when I found them I was quick to snag a few boxes.
I wanted to use them in some kind of recipe and knew the texture of those little bears would go perfect with rice krispie bars. Much like most of my recipes, these are super easy and quick to make but will make your friends smile.
If you've never had chocolate covered gummy bears, you need to finish reading this post, jump in your car, drive to Walgreens, and buy 4 boxes; 3 for this recipe and 1 to 'test'. Otherwise, we can't be friends anymore. Just kidding, kind of. ;)
Chocolate Covered Gummy Bear Rice Krispie Bars
3 tablespoons unsalted butter
10.5 ounces marshmallows
6 cups rice krispies cereal
3 boxes Chocolate Covered Gummy bears*
1 or 2 Hersey Bars and extra gummy bears for topping (optional)
Lightly butter a 9 x 13 pan and set aside.
In a large sauce pan over medium heat, combine the butter and marshmallows. Stir constantly until fully melted. Turn off heat and gradually stir in the cereal. Allow mixture to cool for a couple minutes.
Mix in chocolate covered gummy bears and pour into prepared 9 x 13 pan.
Put a little butter on a piece of wax paper and push mixture into the pan to even out and 'pack down'. Keep at room temperature and fully cool before serving.
For a fun presentation, top with additional gummy bears and drizzle with melted chocolate before serving.
*If you can't find the chocolate covered gummy bears, you could substitute 3/4 cup gummy bears and 3/4 cup chopped Hershey bars or other chocolate.
