So, these are good. I kinda figured they'd be okay just looking at the ingredients. I mean, peanut butter, butter, butterscotch chips, and marshmallow...how could that NOT work out.
After a nice 5 day staycation over the 4th of July I knew these would be a nice treat for my co-workers on Monday morning. They might want to have their oatmeal first, but after that, game on peanut butter bars.
I think these bars are best served chilled. The marshmallows stay soft, but the peanut butter and butterscotch combo hardens just slightly.
No Bake Peanut Butter Marshmallow Bars
2 cups creamy peanut butter
1/2 cup unsalted butter
1, 11 ounce bag butterscotch chips
2, 10.5 ounce bags mini marshmallows
Butter a 9 x 13 pan and set aside.
Fold marshmallows into melted peanut butter mixture until evenly coated and distributed. It's okay if some of the marshmallows melt. Pour mixture into prepared pan and use a spatula to spread around the pan.
Let sit at room temperature firm up (couple hours), or place in the refrigerator to speed up the process. I think they taste the best chilled too!
