Double Chocolate Oatmeal Cookies
Oatmeal cookies get a bad rap. But when they are double chocolate oatmeal cookies how can you not want to try them? I really love cookies with oatmeal - it makes them so chewy.
And when you make them alongside Peanut Butter Oatmeal Cookies everyone wins.
I took both of these cookies to work and they quickly disappeared. I'm so glad I have a place to take all these goodies! They are some of the best recipe testers.
Double Chocolate Oatmeal Cookies
3/4 cup flour
1/4 cup cocoa powder
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 cup unsalted butter, at room temperature
1/2 cup granulated sugar
1/2 cup light brown sugar, packed
1 large egg
1 teaspoon vanilla extract
1 1/2 cup old-fashioned oats
1/2 cup mini chocolate chips
Preheat oven to 350 degrees. Line cookie sheets with baking mats or parchment paper. Set aside.
In a medium bowl, whisk together flour, cocoa powder, salt, baking soda, and baking powder. Set aside.
In the bowl of a stand mixer, cream together the butter and sugars together until smooth, about 3 minutes. Add the egg and vanilla extract. Mix until combined.
Gradually add the dry ingredients and mix until just combined. Stir in the oats and chocolate chips.
Use a cookie scoop to drop cookie dough onto prepared cookies sheets. Bake for 10-12 minutes or until cookies are set around the edges. Don't over bake - they will cook a little more on the pan while cooling.
Remove from oven and let cool on pan before transferring to a wire each to cool completely.
Makes a little over 2 dozen cookies.
