No-Bake S'More Cheesecake - best dessert and so easy to make!


Valentine's Day is sneaking up on us. Chocolates are always a winner in my book but why not take it up a notch and do a quick and easy dessert for your special someone.

This No-Bake S'More Cheesecake is not only super easy, but it's light, airy and packed with graham cracker and chocolaty goodness.

The nice people at Nebraska Furniture Mart sent me delicious See's Candies to use in my baking fun. Plus, I have good news for those of you in need of a new place to store said No-Bake S'More Cheesecake.

No-Bake S'More Cheesecake - best dessert and so easy to make!


No-Bake S'More Cheesecake
Cheesecake does need to chill overnight. 

2 1/4 cups crushed graham crackers, divided
6 tablespoons butter, melted
2 – 8 ounce packages of cream cheese (softened - not low fat*)
1 container marshmallow fluff
3/4 cup milk
12 ounces cool whip, thawed
6 ounces See's Candies, Milk Chocolate

Lightly butter a spring-form pan, set aside. Combine the crushed graham crackers (reserve 1/4 cup for topping) and melted butter. Dump into the spring-form pan* and press to form a crust.

In the bowl of a stand mixer, combine the cream cheese, marshmallow fluff and milk until smooth. Gently fold in the cool whip. Pour mixture on top of crust. Place in the refrigerator while you melt the chocolate.

In a microwave safe bowl, microwave chocolate in 30-45 bursts on 50% stirring between each bursts, until melted and smooth.

Remove cheesecake from the refrigerator and drizzle melted chocolate on top. Using a knife, swirl through top to make a marbled effect. The chocolate will start to set up from the chilled cheesecake - that's okay, just work quickly.

Sprinkle top with reserved graham cracker crumbs. Refrigerate until set - overnight is best. Serve chilled.

*I don't recommend low fat cream cheese - this is already a light and airy cheesecake and you need the regular cream cheese to hold it all together. In addition, this could be made in a 9 x 9 pan or pie plate instead of a spring-form pan.
