Easy Breakfast Pizza with Ham, Egg and Cheese
So...I'm still on a pizza kick. And it's probably because Aldi sells the most amazing pre-baked thin crust pizza crusts in packs of 2 for like $3.00. Darn you Aldi and your deals!
When I lived in Iowa nearly every morning meeting included breakfast pizza from Happy Joe's Pizza. It was amazing. It would be pretty hard to top Happy Joe's, but this sure does satisfy the craving. Plus it's' super simple and only a few ingredients.
You could totally mix it up too; add peppers, use breakfast sausage, maybe mushrooms, different cheeses, etc. Pretty much anything you might put in an omelet, you can put on a pizza.
Ham, Egg and Cheese Breakfast Pizza
4 whole eggs and 4 egg whites
2 tablespoons milk
salt and pepper to taste
5-6 pieces of cooked bacon, broken into pieces
1 1/2 cup shredded pizza cheese (divided)
1 pre-baked thin crust pizza
Crack eggs into a medium bowl. Add milk and salt and pepper to taste. Use a fork or small whisk to blend eggs. Scramble eggs in a skillet over medium heat. Set aside.
If not already cooked, cook bacon and break into pieces.
Pre-heat oven according to pizza crust instructions. Spread 1 cup shredded cheese onto pizza crust. Then add scrambled eggs and bacon. Sprinkle remaining cheese on top of pizza. Bake according to pizza crust instructions, usually 10-15 minutes or until golden brown and cheese is melted.
Serve warm with a side of fresh fruit.
If jazz it up, you could add green peppers before baking or use breakfast sausage instead of bacon. You could even serve with salsa on top!
