Baked Potato Soup
I've mentioned it before, but I'm lucky to work with a pretty fun group of people. We've started a tradition of decorating peoples desks for their birthday, and it's almost always crazy. For my birthday they covered my whole cubicle with post-its, seriously the whole thing. I'm still using the post-its.
A few weeks ago we decorated Crystals desk in a princess theme. Which meant we purchased everything princess themed or pink from the Dollar Tree. Needless to say she loved it and enjoyed spending the day as a Princess wearing her plastic tiara and carrying a magic wand. It was also the talk of the office.
We also tend to have potlucks for birthdays. For Crystal we decided to do a Sandwich Bar Potluck so everyone brought something different for sandwiches. This actually worked perfectly; not too much money/time spent and we had a mostly healthy meal!
Kevin, who we like to pick on for being the youngest in our department and a typical millennial, brought in Baked Potato Soup. Kevin and I tend to poke fun at our fellow co-workers so I also call him by brother-from-another-mother because of our similar sense of humor. His quick wit reminds us of Donna from Parks and Rec. Hilarious.
So, the soup. It was SO good that I snagged the recipe and made it for Jakers and I for Super Bowl Sunday. It was super easy and has a ton of flavor.
Baked Potato Soup
2 cans cream of mushroom soup
1 can cream of celery soup
1 cup sour cream
1 cup milk
3-4 baking potatoes, peeled and cubed
1 cup ham chunks
1 cup Velveeta cheese, cubed
1/2 of a medium onion, chopped
1 cup cubed carrots
1 clove garlic
Salt & pepper to taste
2 bay leafs
Toppings: Shredded cheese, green onions, sour cream
Dump all ingredients into a crock pot. Cook on low for 6 hours or until potato are cooked to your liking.
Tastes delicious when topped with shredded cheese, chopped green onions, and sour cream!
