One of my goals for 2013 was to try more recipe development. I don't want to get too crazy so I'm gradually testing recipes by swapping ingredients to create different flavors from the original. It's also teaching me more about how certain ingredients react in recipes. Over time I hope to get more and more daring. I fully anticipate some major fails along the way, but that's part of the fun!
This little creation is a mix up of the Classic Chocolate Scotcheroos I made awhile back. I wanted to make it more chocolaty with a touch of peanut butter (my favorite combo). I was very pleased with the final product! They had the same chewiness of the original, but so much more chocolate.
Chocolate Peanut Butter Chewy Bars
1 cup light corn syrup
1 cup sugar
1/2 cup creamy peanut butter
1/2 cup semi sweet chocolate chips
6 cups cocoa krispies
1 cup semi-sweet chocolate chips
1 cup creamy peanut butter
Lightly butter a 9 x 13 pan and set aside. Measure out all ingredients so you're ready to go.
Pour corn syrup and sugar into large saucepan. Cook over medium heat, stirring frequently, until sugar dissolves and mixture begins to boil.
Remove from heat. Stir in peanut butter and chocolate chips. Mix until smooth. Add in cocoa krispies. Stir until well coated.
Pour mixture into prepared 9 x 13 pan and press down.
In a separate microwave safe bowl, melt chocolate and peanut butter by microwaving on medium heat for 45 second bursts, stirring between each burst, until smooth. Spread evenly over cereal mixture.
Let stand at room temperature, uncovered, until firm. When cool and set, cut into bars and serve. Store in an airtight container.
