Happy Valentine's Day!
Remember in school when you would decorate a shoe box and then all your classmates would come drop a special valentine in your box? And then you'd get all excited to see what they wrote on your card? Oh sweet memories. Those were the days.
I so wish we could do fun things like that as adults. But for some reason there isn't really arts and crafts time at work. Lame.
I decided to make my Valentine some mint fudge. Jake is a fan of mint chocolate, especially Andes Mints so I knew this would make him smile. I just swapped the chip and flavoring from my Grandma's Fudge and presto! Mint Chocolate Fudge!
Mint Chocolate Fudge
1 ½ cup sugar
2/3 cup Nestle Carnation Evaporated Milk
2 TBSP butter of margarine
¼ tsp salt
2 cups miniature marshmallows OR 7 oz marshmallow cream
9 oz Mint Chocolate Chips
1 tsp mint extract OR a couple drops of Mint Chocolate oil

Line a 8 inch square pan with foil.
Combine sugar, evaporated milk, butter, and salt in medium saucepan. Bring to a full rolling boil over medium heat, stirring constantly. Boil, stirring constantly, for 4 to 5 minutes. Remove from heat.
Stir in marshmallows, morsels, and extract. Stir vigorously for 1 minute or until all combined. Pour into prepared pan; refrigerate for 2 hours or until firm. Lift from pan, remove foil, and cut into squares. Store with wax paper between layers.
