Peanut Butter Popcorn

Jacob and I have been watching a lot of Shark Tank lately. Almost every episode we say "why didn't we think of that". And then Jacob says we should go on the show and I say....we need a really good idea first...

You know what I wish I could have thought of? This popcorn popper. It's genius and makes just the right amount of popcorn in the microwave. It's one of my favorite Uncommon Goods purchases. Spoiler alert - we're probably buying everyone in our family one for Christmas.


It also makes it super easy to make popcorn for recipes. This peanut butter popcorn is amazing. The honey and peanut butter combo is a really nice treat. Jacob wants me to add peanuts next time or maybe M&M's.

Now back to dreaming up a Shark Tank worthy idea!

Peanut Butter Popcorn

3/4 cup popcorn kernels (popped)
1 cup sugar
1/2 cup honey
1/2 cup corn syrup
1 teaspoon vanilla extract
1 cup peanut butter

Pop popcorn - I'm a big fan of my popcorn popper from Uncommon Goods. Remove unpopped kernels and place in a large bowl. Set aside.

In a medium sauce pan, bring the sugar, honey and corn syrup to a boil. Let boil for about 2 minutes. Turn off heat and add vanilla extract and peanut butter. Stir until melted and smooth.

Pour mixture over popcorn and toss to coat popcorn.

Preheat oven to 200 degrees. Line large cookie sheet with a baking mat or parchment paper. Pour popcorn onto prepared pan. Bake for 15 minutes, remove from oven and stir popcorn. Return to oven for 15 more minutes.

Remove from oven and allow popcorn to cool before serving and/or storing in an airtight container.
