I think these might be the best popsciles I've ever had. And it's not because I put a little peach schnapps in them, but I do think that kept them a little icy verses frozen solid.
They are packed with strawberry flavor and make a perfect treat on these warm spring days.
After this experiment I think I'm going to invest in some nicer molds. My Dollar Tree find worked, but it was a little tough removing from the mold. If you don't have molds, you could opt to use paper or plastic cups instead.

Strawberry Popsicles with a Little Booze
2 cups strawberries, pureed (fresh, not frozen)
6 tablespoons simple syrup*
1 tablespoon freshly squeeze lemon juice
1-2 tablespoons peach schnapps (optional)
Combine pureed strawberries, simple syrup, lemon juice and schnapps in a container with a pour spout. Like this one. Stir to combine.
Pour mixture into popsicle mold or paper cups with wooden sticks. Place in the freezer for at least 4 hours to freeze until solid.
When ready to eat, remove from mold and enjoy!
Make 4-6 popsicles.
Simply Syrup
2/3 cup sugar
2/3 cup water
Combine the sugar and water in a small saucepan and bring to a simmer over medium-high heat, stirring until sugar is dissolved and mixture is transparent. Turn off heat and let cool.
Makes 1 cup of simple syrup. Store leftovers in the refrigerator.
