Snickerdoodle Kettle Corn

Snickerdoodle Kettle Corn - crazy easy and delicious! Makes a great snack or package as gifts.

Over the holidays we purchased a gourmet popcorn tin from Aldi. It had a peppermint, caramel coconut and a snickerdoodle kettle corn. I died over the Snickedoodle Kettle Corn - it was sweet, salty and drizzled with white chocolate.

I knew I had to recreate that magic sooner rather than later.

This is a crazy easy recipe. And even better that Aldi sells bags of prepared kettle corn. However, you could always use microwave kettle corn in its place.

I took this treat to work and my friend Raul claimed it as his own. I think he was on a bit of sugar high by the end of the day.

Give this a try for your next get-together. It could even be packaged up for a quick gift. It's so good.

Snickerdoodle Kettle Corn

10-12 cups prepared kettle corn*
4 tablespoons unsalted butter, melted
1/4 cup sugar
1 tablespoon cinnamon
6-8 ounces Ghirardelli White Melting Wafers

Line two cookie sheets with a baking mat or waxed paper and set aside.

Place prepared kettle corn in a large bowl. Melt the butter in microwave safe bowl. In another bowl whisk together the cinnamon and sugar.

Pour the melted butter over kettle corn and toss to coat the popcorn. Sprinkle the cinnamon and sugar mix over popcorn and toss to coat. Pour popcorn onto prepared cookie sheets.

Melt the white chocolate wafers in the microwave buy cooking for 30-45 second bursts at 50% power, stirring between each burst. Once melted and smooth, drizzle chocolate over popcorn.

Once set, break into pieces and store in an airtight container.

*If you cannot find prepared kettle corn, you can use microwave kettle corn.
