When I worked and lived in Iowa, Sally, one of my friends, made this beer cheese dip for all of our potlucks. It's amazing. It's one of those dips that people look at it like...."beer cheese?"..."what's in it?"...but then they try it and can't stop eating it.
Sally always made the dip with a darker beer and I think that is what makes it so good; more depth and flavor in the end result. I used Boulevard Pale Ale - it's kind of a medium-dark beer.
I followed Sally's lead and took this to a work potluck and it was a hit! Jacob loved it too. Lucky for him I had to save some back for pictures so he had his own little portion. Being married to a food blogger isn't all bad. ;)

Irresistible Beer Cheese Dip
16 ounces cream cheese, softened
1/3 cup beer (any kind, but darker beer is better)
1 packet ranch dressing mix
2 cups shredded cheddar cheese
Pretzels, crackers, chips for serving.
Place cream cheese, beer, and ranch dressing mix in a bowl. Beat with an electric mixer until smooth and creamy (couple of minutes). Add in the cheddar cheese and mix on low till blended (not long, 20 seconds). If the dip is too thick, add a little more beer.
Keep refrigerated until ready to serve. Serve with pretzels, crackers, or chips.
