White Cinnamon Oatmeal Cookies


My dear sister-in-law, Jill, is helping with today's post. She always finds the best recipes, like her chicken pot pie, and isn't afraid to try new dishes. Lucky for me, she always shares the winners!

Jill lives in Des Moines with my brother-in-law Brad, nephew Isaac, and their golden-doddle Emmy. They also have a couple turtles. I can't wait to see them next week at our Christmas celebration!


Now for the cookies. These were a big hit in her house and I know they will be in yours too! And..how did I miss Hersey's Cinnamon Chips?!?!?!  I love Holiday special ingredients!


White Cinnamon Oatmeal Cookies

1 cup butter (2 sticks), softened
1 cup brown sugar, packed
1/3 cup white sugar
2 eggs
1 1/2 tsp. vanilla
1 1/2 cup flour
1 tsp. baking soda
2 1/2 c quick oats
1/2 pkg. Hershey's Cinnamon Chips
1/2 pkg. White chips

Preheat oven to 350 degrees. Line baking sheets with parchment paper or lightly butter.

Whisk together flour and baking soda. Set aside.

Mix butter with brown sugar and white sugar until creamy. Add eggs and vanilla; mix.

Add flour and baking soda; mix well. Add the quick oats, cinnamon chips, and white chips. Stir to combine.

Use a cookie scoop or tablespoon to drop dough onto prepared cookie sheets.

Cook 8-10 minutes or until a light brown around the edges (do not overbake). Allow cookies to cool a few minutes before transferring to a cooling rack.
