S'More Cheese Ball
Cheese balls are so fun. My total weakness is our family favorite cheese ball with pineapple, green onions and peppers. And dessert cheese balls are a close second.
I love my cookbook, Great Balls of Cheese. It has cheese balls for every occasion both savory and sweet. Plus it's super cute with amazing photos.
This S'More Cheese Ball is a fun twist on a traditional s'more. I think the added marshmallows are my favorite part.

S'More Cheese Ball
8 ounces semisweet chocolate
1/2 cup brown sugar, packed
8 ounces cream cheese, softened
1 teaspoon vanilla extract
1 cup mini marshmallows
8 graham crackers, crushed
Vanilla wafers or graham crackers for serving.
In a microwave safe bowl, microwave the chocolate until smooth by cooking on 50% power for 30 second bursts stirring between each burst. Once smooth add the brown sugar and stir until combined. Set aside to cool for 15 minutes.
In the bowl of a stand mixer, mix the cooled chocolate/brown sugar mixture, cream cheese and vanilla until combined (couple minutes). Stir in the marshmallows. Line a bowl with plastic wrap and pour the mixture into the lined bowl. Refrigerate for 30-60 minutes or until just set, but still soft.
Remove from bowl and shape into a ball. Remove plastic wrap and roll in crushed graham crackers. Serve with graham crackers and/or vanilla wafers.
Note: Recipe called for chilling for 2 hours or overnight. Even when set out at room temperature for a couple hours the cheese ball was still very firm. Delicious but made for more of a spreadable cheese ball and not for dipping.
