[Copy Cat] Salted Nut Roll Bites
Pay Day or Salted Nut Roll, that is what this little bites taste like! They are almost too dangerously easy to make when craving something sweet and salty.
Like normal, I took these treats to work and left in the kitchen for my co-workers. They quickly disappeared and I had a number of requests for the recipe. So they are co-worker tested and approved!
I really liked these little bites chilled. It make them a little extra chewy but they are also delightful at room temperature.
[Copy Cat] Salted Nut Roll Bites
1/2 cup creamy peanut butter
1/2 cup honey
1 cup nonfat dry milk (powdered milk)
36 mini marshmallows
1 cup chopped peanuts
In the bowl of a stand mixer, combine the peanut butter, honey and dry milk until combined and looks like cookie dough.
Take 1/2 tablespoon of dough and wrap around one mini marshmallow creating a ball with a marshmallow center.
Roll each ball in crush peanuts to coat. Store in the refrigerator to firm up. You may have to reshape a little before serving.
Best served chilled - makes them good and chewy!
