Caramel Puppy Chow
When we were at the Lake this summer we stopped at Harry and Davids at an Outlet Mall. I'm such a sucker for that stuff. I picked up my favorite pepper relish and a bag of Moose Munch. Well that bag only lasted a couple days once back home. What, it's a small bag. Don't judge.
I really wanted to recreate that treat but wanted something easy. So, I combined a couple recipes I've already made to give me a similar treat. I get the caramel corn from the caramel coated chex and the chocolate peanut butter flavor from the puppy chow.
Plus this is a microwave recipe so no oven needed. Winning. This make a huge bowl of goodness so perfect for a Football party....so excited it's Football season because that means fall.
Caramel Puppy Chow
Caramel Mix
8 cups Chex Cereal (Rice or Corn)
3/4 cup brown sugar, packed
6 tablespoons unsalted butter
3 tablespoons light corn syrup
1/4 teaspoon baking soda
Measure cereal in a large, microwave safe bowl. Line cookie sheet with parchment paper or baking mat. Set aside.
In a 2-cup microwave safe bowl, add brown sugar, butter, and corn syrup and microwave on high for 1 minute. Stir. Microwave 1 more minute, or until melted and smooth. Stir in baking soda until dissolved. Pour caramel mixture over cereal, stirring until evenly coated.
Microwave coated cereal on high for 3 minutes, stirring after each minute. Spread mixture on prepared cookie sheet. Let mix cool before adding to the Puppy Chow at the end of this recipe.
Puppy Chow
9 cups Chex Cereal (Rice or Corn)
1 cup semisweet chocolate chips
1/2 cup peanut butter
1/4 cup butter or margarine
1 teaspoon vanilla
2 cups powdered sugar (more/less for your desired consistency)
Pour cereal into a large bowl. Set aside.
In a microwave save bowl, pour in chocolate chips, peanut butter, and butter. Microwave on high for 1 minute, stir, and microwave in 30 seconds bursts until mixture is smooth. Stir in vanilla extract.
Pour mixture over cereal and stir with a large spoon to fully coat cereal. Sprinkle 1 cup powdered sugar on top of chocolate coated cereal, seal lid, and shake container to spread the powdered sugar around.
Open container and break up any large chunks. Add another cup of powdered sugar, seal lid, and shake one more time. Let puppy chow set up for 30-45 minutes.
Once cool, add the caramel chex to the puppy chow and mix. Serve right away or store in an airtight container.
