White Chocolate Macadamia Nut Cookies
Guess what!?! This is my 400th post! That's a lot of cookies, cakes, bars, and pies. It only seemed fitting that I share cookies as my 400th post since cookies are my go-to dessert.
White Chocolate Macadamia Nut Cookies are one of those cookies that I don't buy but if they are on a plate at a party I'll have one. It's pretty silly because these cookies are amazing. The macadamia nuts are buttery and add a perfect crunch to a cookie. Plus white chocolate.
Also, it's my birthday week! My 32nd birthday is Thursday and we have a little trip planned to celebrate. I'm sup excited.
Until then, let's all eat cookies.
White Chocolate Macadamia Nut Cookies
2 1/4 cups flour
1 teaspoon baking soda
1/4 teaspoon salt
1 cup brown sugar, packed
1/2 cup granulated sugar
1/2 cup unsalted butter, softened
1/2 cup butter flavored shortening
1 teaspoon vanilla
1 egg
8 ounces white baking chips
3/4 cup macadamia nuts, coarsely chopped
Heat oven to 350 degrees. Line cookie sheets with parchment paper or baking mats. Set aside.
In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
In the bowl of a stand mixer, beat sugars, butter, shortening until light and fluffy, 3-4 minutes. Add vanilla and egg and mix another 1-2 minutes. Scrape down bowl a couple times during mixing to ensure all is incorporated.
Gradually add in the flour mixture and mix until incorporated (dough will be stiff). Stir in white baking chips and macadamia nuts.
Using a cookie scoop or tablespoon, drop dough onto lined cookie sheets. Bake 10 to 12 minutes or until light brown. Let cool on pan for a couple minutes before moving to a cooling rack to cool completely.
Makes a little over 3 dozen cookies.
