Chunky Peanut Butter Chocolate Chip Cookies
Trying to write a blog post with Henry around is nearly impossible. He has to constantly touch me and/or the computer. His favorite thing to do is drop his toy on the keyboard so that random keys magically get pressed. It's super helpful and I never groan and cuss.....
I think he's trying to start his own blog.
Luckily he's cute, most of the time.
But I managed to suffer through so I could share these cookies with you. This is another recipe from my grandma's recipe box. I love the use of chunky peanut butter and how thick/puffy they turned out. The recipe makes about 4-5 dozen cookies. I only made a couple dozen and froze the rest for when my mom and aunt come to visit in a few weeks.

Chunky Peanut Butter Chocolate Chip Cookies
1 cup butter flavored shortening
1 cup chunky peanut butter
1 cup sugar
1 cup brown sugar, packed
2 eggs
1 teaspoon vanilla extract
2 cups flour
1 teaspoon baking powder
1 1/2 cups semi sweet chocolate chips
Preheat oven to 350 degrees. Line baking sheets with a baking mat or parchment paper.
In a medium bowl, whisk together the flour and baking powder. Set aside.
In the bowl of a stand mixer, cream together the shortening, peanut butter, sugar, and brown sugar until light and fluffy (couple minutes). Mix in eggs and vanilla. Gradually add in flour mixture and mix to combine. Stir in chocolate chips.
Use a cookie scoop or tablespoon to drop dough onto prepared cookie sheet. Bake 10-15 minutes or until just staring to turn golden brown on the edges.
