Growing up my grandma always had 2 things in her refrigerator when we visited: Prices Cheese Spread and salsa. We would go through the whole container of cheese spread quickly. I was a pretty picky eater as a kid so I'm kind of surprised I liked it so much.
When I realized I could make my own Pimento Cheese Spread I ran to the store....okay I drove....I only run if I'm being chased. We almost always have all the ingredients on hand, so I just had to buy Pimentos. (I've never bought them so I had to do a little searching - they are buy the canned veggies and beans.)
This recipe comes together so quickly! You could eat it right away but I let it chill for about 30 minutes before digging in.
Plus, anytime I make a recipe that reminds me of my grandma, it's a good day.
Pimento Cheese Spread
4 ounces cream cheese, softened
1/4 cup mayonnaise
2 1/2 tablespoons pimentos, chopped
1/4 teaspoon salt
1/8 teaspoon ground black pepper
1/8 teaspoon garlic powder
1 cup grated sharp cheddar
1/2 cup grated mild cheddar cheese
1/2 cup grated mozzarella cheese
In the bowl of a stand mixer, beat the cream cheese and mayo until smooth. Add in the pimentos, salt, pepper, garlic powder, and cheeses and mix until combined, about a minute.
Pour into a bowl with a lid and refrigerate until chilled, 30 minutes, before serving.
Serve with crackers. I've also heard people use to make a sandwich!
