Meatloaf Using Ground Venison
Before you run off, you can totally make this recipe using bison or lean ground beef if you're not a fan of venison. Growing up in the mid-west I've had my fair share of venison but I know it's not for everyone. It is a very lean and packed with protein, similar to bison.
I think my favorite part about meatloaf is the sweet and tangy topping. So good! Plus the leftovers make a yummy meatloaf sandwich.
We have a freezer full of venison so I see more recipes like this in my future!
Deer Loaf
1 lb ground venison (could also use bison or lean beef)
1 lb mild sausage
1/2 teaspoon salt
1/2 teaspoon ground pepper
1 medium onion, chopped
2 eggs, lightly beaten
1 cup Italian bread crumbs
Topping
2/3 ketchup
4 tablespoons brown sugar
1 1/2 tablespoons mustard
Preheat oven to 375 degrees. Lightly grease a large loaf pan or two smaller loaf pans. Mix all ingredients in a large bowl. Place in prepared loaf pan(s) and shape into a loaf/pack down.
Combine ketchup, brown sugar, and mustard in a small dish and pour on top of the meatloaf.
Bake for 1 hour, or until center is cooked through. Serve with a little extra ketchup and a fresh salad!
Use leftovers to make a meatloaf sandwich!
