Chicken Salad with Grapes, Celery, and Sunflower Seeds
I think I mentioned it on FB awhile back, but we recently joined Costco. Both of our families are Sams Club members so we did risk getting kicked out of the family for our switch. Honestly, we joined Sams Club last year to buy a TV at a cheaper price so when our membership was up we wanted to try out the other guy.
Like I said we've been pleasantly surprised with the options at Costco. Their fresh fruit, veggies, and meats always look fresh and tasty! Plus on our first visit I found a 3-tier cupcake/bake good carrier for like $17.00 so we know I'm hooked.
We purchased their organic chicken and while it was more expensive than the regular chicken, it was so good, juicy, and tender. One can only eat so many grilled chicken breasts so I mixed it up and made chicken salad. I love chicken salad; you can really toss just about anything in with chicken and a little mayo. Plus when you make it yourself you can control how much mayo. I only used a cup and that was just enough that you can taste it but not so much that it's soupy (and full of unnecessary calories).
Here's the dets. (Do people still say that? Dets. I'm usually like a year behind any and all lingo or catchphrases.)
Chicken Salad with Grapes, Celery, and Sunflower Seeds
4 cooked and shredded chicken breasts*
2 cups sliced grapes
1 cup chopped celery
1 cup lite mayonnaise (more/less depending on your preferences)
Salt and Pepper to taste
1/2 cup roasted sunflower seeds
In a large bowl with a lid, dump in shredded chicken, sliced grapes, celery, and mayonnaise. Add a little salt and pepper to your liking. Stir to combine. Before serving, add sunflower seeds.
Serve on bread, crackers, tortillas, or pitas. It's also good to just eat on it's own!
Other yummy add-ins could be pineapple, apples, pecans, walnuts, and feta cheese just to name a few.
*I like to boil my chicken breast to make shredding super easy. This is done by placing the uncooked chicken in a pot with water or chicken broth. Allow chicken to cook/boil until a fork test shows chicken breaks apart easily.
