We broke down and added HBO to our Dish account. We just got caught up on Game of Thrones and it's amazing. I'm tempted to rewatch from the beginning, it's that good.

I also got caught up on Girls. Any other HBO series I should watch? I've started Veep a couple times but couldn't get into it.

But enough about TV, let's get to these Scotcheroo Bites.



You know what's better than the traditional Scotcheroos? Scotacheroo Bites that you can pop one by one! This is one of the easiest recipes and ALWAYS disappears quickly. These are perfect for your summer potlucks.

Scotcheroo Bites

1 cup light corn syrup
1 cup sugar
1 cup creamy peanut butter
6 cups rice krispies
1 cup semi-sweet chocolate chips
1 cup butterscotch chips

Line 2 cookie sheets with wax paper. Set aside. Measure out all ingredients so you're ready to go.

Pour corn syrup and sugar into large saucepan. Cook over medium heat, stirring frequently, until sugar dissolves and mixture begins to boil.

Remove from heat. Stir in peanut butter. Mix until smooth. Add in rice krispies. Stir until well coated.

Using a cookie scoop, drop mixture onto prepared cookie sheets. You'll end up with 45-60 bites. After all the bites have been made, put a little butter on your hands, go back and shape into balls.

Allow bites to set for 10-15 minutes before adding the chocolate/butterscotch topping.

In a separate microwave safe bowl, melt chocolate and butterscotch chips by microwaving on 50% power for 45 second bursts, stirring between each burst, until smooth.

Dunk each bite into chocolate mixture to cover half of the bite. Set back on the wax paper lined cookies sheets, chocolate side up, to set.

Let stand at room temperature, uncovered, until firm. Once cool and set, enjoy!
