Caramel Apple Dip
Seriously, where is the time going? I cannot believe it's almost October. I am loving the change in weather and eager to see the leaves fall. This is by far my most favorite time of year.
While I was back in Nebraska a few weeks ago I picked apples at my parents house and was given a few new recipes from my mother-in-law. Besides pie I can't think of another way to eat an apple: dip into something sweet!
This Caramel Apple Dip is Jake's new favorite and mine too. The addition of the marshmallow cream gives it the most amazing texture and keeps a lot of the "fluff". We loved dipping the tart green apples but found that pretzels were pretty delightful. Jacob thought Oreo's would be a good dipping option....reason #7434 why I love him.
Caramel Apple Dip
8 ounces cream cheese, softened
1/2 cup brown sugar, packed
1/4 cup caramel ice cream topping
1 teaspoon vanilla extract
1 cup marshmallow cream
4 tablespoons lemon juice
2 tablespoons water
In the bowl of a stand mixer combine the cream cheese, brown sugar, caramel and vanilla extract until smooth and creamy (2-3 minutes). Fold in the marshmallow cream until combined.
Serve right away or store in the refrigerator until ready to serve. Serve with apples, vanilla wafers, and/or pretzels.
To keep the apples from browning, place lemon juice and water in a bowl. Slice apples and place in lemon/water mix. The acid from the lemon juice will preserve the apples. However, I recommend slicing the apples right before serving, not the night before.
