S'More Sugar Cookie Pizza

How about a chewy sugar cookie crust topped with the goodness of S'Mores? Yep. It's good. I'm obsessed with the graham cracker crumble....it's amazing.

I'm kinda of on a S'More kick with these frozen S'More's, and these bars, and then this pizza. I think it's because we are only a couple weeks away from our lake vacation meaning a perfect opportunity to have real s'more by a camp fire. Can not wait!!

Also - every time I think about S'More I play this scene in my head. Oh, Sandlot.

S'More Sugar Cookie Pizza

1 tube pre-made sugar cookie dough
4 tablespoons cold butter, cut into small pieces
1/4 cup sugar
1/2 cup crushed graham crackers (about 4 whole crackers)
1/2 cup flour
1/4 teaspoon cinnamon
dash of salt
1 cup mini marshmallows
1/2 cup semi sweet chocolate chips
1/2 cup Reese's Peanut Butter chips

Preheat oven to 350 degrees. Slice cookie dough and place on a cookie sheet or pizza sheet. Press down to form an even layer of dough. (I did use a rolling pin to even out.)

In a medium bowl, use a fork or pastry blender to combine the butter, sugar, crushed graham crackers, flour, cinnamon, and salt until crumbly. Sprinkle mixture on top of uncooked cookie dough.

Bake cookie for 12 minutes, or until almost set in the middle. Remove from oven and top with marshmallows and chips. Bake another 5-7 minutes or until cookie is golden brown and marshmallows and chips are melted.

Serve pizza right away (it's delicious and messy like a S'More) or allow to cool. Use a sharp knife to cut - a pizza cutter doesn't work (trust me). Store in an airtight container.
