Caramel Coated Candy Filled Snack Mix

The second season of Orange is the New Black starts streaming on Friday. That will be the event that forces me to restart our Netflix subscription. I'm a really big fan of what Netflix is doing. Having the option of watching a full season whenever you'd like, at your own pace, is a ton of fun. I hope TV networks catch on and start offering the same thing. That'd be magical.

Marathoning, or Binge-viewing, does require dedication and snacks. This Caramel Coated Candy Filled Snack Mix might be one of the best things I've ever made and would be perfect binge-viewing fuel.

Seriously. It's dangerously good. Like, it needs to get out of my house or all the calorie counting and tracking I've done over the past 30 days goes out the window.

The caramel coated Chex is the base. From there you could really add any of your favorite candies and nuts. I chose Reese's and Rolo's but you could use Snickers, Milk Duds, M&M's, peanuts, chocolate covered peanuts...I think you get the idea. The drizzle on top just helps hold it all together.

This would be a good snack mix to package up for gifts too. I mean, I'd gladly accept it and eat it.

Caramel Coated Candy Filled Snack Mix

8 cups Chex mix (Rice, Corn, or Chocolate)
3/4 cup brown sugar, packed
6 tablespoons unsalted butter
3 tablespoons light corn syrup
1/4 teaspoon baking soda

20-25 Mini Reese's Peanut Butter Cups, cup in fourths
20-25 Rolos, cup in half
1/2 cup Cashews pieces

1/2 cup milk chocolate chips
1/2 cup white chocolate chips
1/2 cup butterscotch chips

Measure out cereal in a large, microwave safe bowl. Line cookie sheet with parchment paper. Set both aside.

In a 2-cup microwave safe bowl, add brown sugar, butter, and corn syrup and microwave on high for 1 minute. Stir. Microwave 1 more minute, or until melted and smooth. Stir in baking soda until dissolved. Pour caramel mixture over cereal, stirring until evenly coated.

Microwave coated cereal on high for 3 minutes, stirring after each minute. Spread mixture on prepared cookie sheet. Cool 10-15 minutes before moving on with the recipe.

Unwrap Reese's Peanut Butter Cups and Rolos. Cut each in half and/or fourths. Set aside. Once coated cereal is cool to the touch, sprinkle with Reese's, Rolos, and Cashew Pieces. Set aside.

In 3 small microwave safe bowls, separately melt the chocolate chips, white chips, and butterscotch chips by microwaving on medium heat for 30 second bursts, stirring between each burst until melted and smooth. Drizzle over the coated cereal, candy, and nuts.

Place mixture in the refrigerator to set. Once set break into pieces and store in an airtight container, if it lasts that long...
