Peanut Butter Ball Bars

Peanut Butter Ball Bars - all the taste without all the fuss!

We had such a nice weekend! My mom and aunt came to visit. Aside from just having them here, the highlight was probably bowling. I scored 38 my first game.....obviously won't quit my day job. I'll share more about our family weekend later this week. Lets get to the recipe.

These bars. All the goodness of peanut butter balls but not all the fuss.I really like how these turned out too - one of my favorites. I'm such a sucker for the chocolate and peanut butter, always.

Peanut Butter Ball Bars - all the taste without all the fuss!

Peanut Butter Ball Bars

Bar
18 ounces creamy peanut butter
3/4 cup unsalted butter
2-3 cups powdered sugar (
1 1/3 cup graham cracker crumbs

Topping
2 cups chocolate chips (semi-sweet or milk)
1/2 cup creamy peanut butter

Line a 9 x 13 pan with foil or wax paper. Or, use this handy pan - I picked up one at HomeGoods over the weekend!

In the bowl of a stand mixer combine the creamy peanut butter, butter, 2 cups powdered sugar, and graham cracker crumbs. If mixture is too thin add an additional cup of powdered sugar. Spread peanut butter mixture in prepared pan.

In a microwave safe bowl, melt the chocolate chips and peanut butter by microwaving on high for 30 second bursts, stirring between each burst, until smooth. Pour chocolate over peanut butter bars and spread to cover evenly.

Refrigerate overnight to set. Cut into small squares and serve. Keep refrigerated for best results.
