Mexican Pizza

Super delicious Mexican / Taco Pizza - Change up taco night with this pizza!

I'm kinda on a not really pizza pizza kick. It started with the Bacon Cheeseburger Pizza and now we've moved on to Mexican themed. Whether you call it Mexican Pizza of Taco Pizza it will be a hit! We have Mexican food at least once a week so this is a fun way to mix it up.

This pizza comes together super quick and you can easily tailor it to your tastes, just like you do when you make tacos.

Mexican Pizza / Taco Pizza

1 prepared pizza crust (I use Mama Mary's Thin and Crispy)
3/4 cup re-fried beans
1/4 cup enchilada sauce
1 cup ground beef (cooked, drained, and seasoned)*
2 cups Mexican shredded cheese
1/2 cup chopped green onions

Pizza Toppings
Shredded lettuce
Sour cream
Salsa

*For the ground beef: Fully cook and drain 1 pound ground beef. Sprinkle with 2 tablespoons taco seasoning. Add 1/4 cup water and stir. Allow meat to simmer on low for 5 minutes or so. You will have leftover ground beef to make another pizza or use for tacos or nachos.  

Place prepared crust on a pizza sheet and pre-heat oven according to package directions.

In a small bowl, combine the enchilada sauce and re-fried beans. Then, spread the mixture onto the pizza crust. Sprinkle with cooked and seasoned ground beef, followed by the cheese, and green onions.

Bake according to package directions or until cheese is melted, usually 10-15 minutes.

Before eating, top with shredded lettuce, sour cream, and salsa.
