Oatmeal Waffles with Caramelized Pears

Ginny and I are taking on Christmas this week. I can not believe Christmas Eve is a week from today. Insane. We finally finished our shopping over the weekend; I've never put it off this long. Luckily Jacob and I made a list, only went to 3 stores, and got in and got out. Done.

Christmas Morning is exciting, no matter your age. I've made a delicious breakfast to make the morning even better! My sister-in-law and brother-in-law sent us a Harry & David gift pack for Christmas and inside were their famous pears. Yes, they are amazing to eat just as they are, but I wanted to find a way to incorporate them into a recipe. These Oatmeal Waffles did not disappoint and the addition of sweet and juicy pears....mind blown.

Plus - the house smelled amazing!

You could even make the waffles and pears the might before and warm them up on Christmas Morning.

Oatmeal Waffles with Caramelized Pears -- Perfect breakfast for Christmas morning...or any morning.

Oatmeal Waffles with Caramelized Pears

Waffles
2 large eggs
1 1/2 cups milk
1/2 cup unsalted butter, melted but cooled
1 teaspoon vanilla extract
1 1/2 cups flour
1 cup oatmeal
3 tablespoon firmly packed brown sugar
1 tablespoon baking powder
1/2 teaspoon cinnamon
1/4 teaspoon salt
1 pear, pealed, cored, and chopped

Caramelized Pears
4 tablespoon unsalted butter
1/2 cup brown sugar, packed
3-4 pears, pealed, cored, and sliced
1 tablespoon maple syrup
Powdered sugar for serving

In a medium bowl, whisk together the eggs, milk, butter, and vanilla. Set aside.

In a large bowl, whisk together the flour, oats, brown sugar, baking powder, cinnamon and salt. Make a well in the center of the dry ingredients and pour in the egg mixture. Whisk until mostly smooth, with just a few lumps. Fold in chopped pear.

Ladle onto preheated waffle maker and cook according to manufacture directions.

Preheat oven to 200 degrees. Place cooked waffles on a cookie sheet in the oven to stay warm while other cook.

For caramelized pears, melt butter in a sauce pan on medium-high until it starts to bubble. Add in brown sugar and stir to combine. Allow butter and sugar to cook for about 3 minutes. Add in prepared pears and stir to coat pears. Cook until pears are tender, 5 minutes or so. Add in maple syrup and stir before serving.

(You could even add in pecans or craisins too!)

To serve, top cooked waffle with caramelized pears and sprinkle with powdered sugar.
