Last year I did attempt to go to Target at midnight to buy a new camera. Jacob, his dad, and I drove to Target. The line to get into the store was all the way around the building. We didn't even park....I said forget it and bought it online for the same price.
I might not be brave enough, but I still love watching social media as we work towards Black Friday - it's fun to see so many people prepping and how it's become one of their family traditions.
To help you prep for your Black Friday Shopping Extravaganza, and ensure you have energy to stand in line, run in and out of stores, and cram all your bags into your car, I made you energy cookies. These cookies are chewy and packed with oats, pecans, coconut, and chocolate. Keep these suckers in your purse and you'll be ready to dominate. They might work for bribes to butt in line too.
Black Friday Energy Cookies
1/2 cup unsalted butter, softened
1/2 cup creamy peanut butter
1 1/4 cup granulated sugar
1 large egg
1/4 cup water
1 teaspoon vanilla extract
1 1/2 cups all purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup quick oats
1 cup chopped pecans
1 cup shredded coconut
1 1/2 cups semi-sweet chocolate chips
Preheat oven to 375 degrees. Line cookie sheets with parchment paper or a baking mat. Set aside.
In a medium bowl, whisk together the flour, baking soda and salt. Set aside.
In the bowl of a stand mixer, cream butter and peanut butter. Add in sugar and beat for 5 minutes. Add in egg, water and vanilla, cream until well combined. Gradually add in the flour mixture, scraping down bowl to make sure its all combines.
Add in oats, chopped pecans, coconut, and chocolate chips. Use a cookie scoop, or tablespoon, to drop dough onto prepared cookies sheets.
Bake for 10-12 minutes, or until edges just start to turn light brown. Allow cookies to cool on cookie sheet for 5 minutes or so before transferring to a cooling rack. Store in airtight container.
Makes about 4 dozen cookies.
