Chewy Strawberry Cookies
Oh, hi, cookies. It's been awhile. Okay, it's only been 3 weeks since I made cookies, but that's like an eternity in food blogger time.
I love quick and simple recipes. Yes, you do need to chill the dough for a couple hours, but there are only 4 ingredients. I quickly made the dough when I got home from work and then after dinner I popped the cookies in the oven. Perfect.
If strawberry isn't your thing, you could swap out for chocolate cake or another cake mix.
Chewy Strawberry Cookies
1 strawberry cake mix
2 eggs
2 cups whipped topping
Powdered Sugar
In a large bowl, use a mixer to combine the cake mix, eggs, and whipped topping. Refrigerate dough for 2 hours.
Preheat oven to 350 degrees. Roll 1 inch dough balls in powdered sugar, then drop onto a lined cookie sheet. Bake 9 to 11 minutes or until light golden brown around the edges.
Remove cookies from the oven and place on cooling rack to fully cool. Store cookies in the refrigerator.
