Chewy Strawberry Cookies

Chewy Strawberry Cookies - 4 ingredient, cake mix cookies. You could even swap out and use chocolate cake!

Oh, hi, cookies. It's been awhile. Okay, it's only been 3 weeks since I made cookies, but that's like an eternity in food blogger time.

I love quick and simple recipes. Yes, you do need to chill the dough for a couple hours, but there are only 4 ingredients. I quickly made the dough when I got home from work and then after dinner I popped the cookies in the oven. Perfect.

Chewy Strawberry Cookies - 4 ingredient, cake mix cookies. You could even swap out and use chocolate cake!


If strawberry isn't your thing, you could swap out for chocolate cake or another cake mix.

Chewy Strawberry Cookies

1 strawberry cake mix
2 eggs
2 cups whipped topping
Powdered Sugar

In a large bowl, use a mixer to combine the cake mix, eggs, and whipped topping. Refrigerate dough for 2 hours.

Preheat oven to 350 degrees. Roll 1 inch dough balls in powdered sugar, then drop onto a lined cookie sheet. Bake 9 to 11 minutes or until light golden brown around the edges.

Remove cookies from the oven and place on cooling rack to fully cool. Store cookies in the refrigerator.

  1. Yum! I've done basically this with red velvet cake mix, but never thought to try other cake mixes! This sounds delish. (And yes, 3 weeks is far too long to go without making cookies.)

    1. Yes, it will be a little fluffy but will firm up after you refrigerate. Hope you love them as much as I do!

    1. It will be stiff after it's refrigerated. This will help when rolling into balls and into the powdered sugar.
