Banana Cake with Chocolate Mocha Frosting

I'm still licking my wounds from my failed popcorn balls. Thankfully, my SIL, Jill, made a delicious cake that I get to share with you. I love that my family loves to bake as much as I do. And, that they are so good at it!

This banana cake is super moist due to the bananas and sour cream. The mocha frosting is a fudge like frosting; thick, rich and delicious. If you like banana bread you'll love this cake! Perfect with a morning cup of coffee!

Banana Cake

1 stick butter
1 2/3 cups sugar
2 eggs
2-3 med.ripe bananas, mashed
2 cups flour
1 tsp. baking soda
1 tsp. baking powder
1 cup sour cream
1 tsp. vanilla

Cream together the butter and the sugar. Mix in eggs and bananas. Sift together flour, baking soda and powder. Add flour mixture to banana mixture, alternatively with sour cream. Add vanilla, and mix well. Pour into greased 9 x 13 cake pan and bake for 30-40 mins or until lightly browned and fork comes out clean. Frost with Chocolate Mocha Frosting.

Chocolate Mocha Frosting

16 oz powdered sugar (more/less for desired consistency)
Cocoa, to desired color
1 stick of butter
1 TBSP prepared leftover coffee (more/less for desired consistency)

Mix all ingredients together until smooth and spread onto cooled cake.
