Caramel Pops
Did you notice my new look!?!? I figured it would be a fun way to start 2013. And, is it really New Years Eve? This year sure went fast. Tomorrow I'll post my top posts from 2012 and a few of my goals for 2013.
Are you throwing a party for New Years? Caramel Pops would be a fun and easy party mix to serve. My mom makes this for Christmas every year and it is gone before we can say "Caramel Pops...what's in this stuff?" The main ingredient is Barrel O' Fun Corn Pops and can be found in the chip isle of most grocery stores. They look almost like Cheetos Puffs without the cheese.
Caramel Pops
2, 6 oz bags of Barrel O' Fun Corn Pops
1/2 cup Butter
1/2 cup Light Corn Syrup
1 cup Brown Sugar
1 tsp Baking Soda
Pour corn pops onto large roasting pan.
In a large sauce pan, add butter, syrup, and sugar and cook for 2 minutes or until bubbly around the edges, remove from heat. Add baking soda to cause foaming (this will allow for proper coating of pops). Pour caramel slurry over corn pops and stir until pops are properly coated.
Place in 250 degree oven for approximately 45 minutes stirring every 10 minutes.
Remove from oven and pour onto waxed paper. Break apart (before pops can cool) to desired piece size.
