Orange Cookies with Orange Cream Cheese Frosting

I am a sucker for a frosted cookie. I mean, I can't think of anything that isn't better with a little frosting. Am I right?

Orange Cookies with Orange Cream Cheese Frosting

*Dough must be chilled for 2-3 hours before baking!

Cookies
2 1/2 cups cake flour (No cake flour? Use this substitute.)
2 teaspoon cornstarch
1 1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 cup unsalted butter, at room temperature
1/4 cup all vegetable shortening (unflavored), at room temperature
1 cup granulated sugar
Zest of 1 medium orange (about 1 tablespoon)
1 large egg
1 large egg white
1 teaspoon orange extract
1 teaspoon vanilla extract

Frosting
4 oz cream cheese, softened
1/4 cup salted butter, softened
1 teaspoon orange extract
2 1/2 cups powdered sugar
Colored sprinkles, optional

In a medium bowl, whisk together the flour, cornstarch, baking powder and salt. Set aside.

In the bowl of a stand mixer, mix  the butter, shortening, sugar and orange zest on medium speed until very pale and fluffy (about 4 minutes). Scrape down the bowl to ensure all is incorporated.

Add in the egg, egg white, orange extract and vanilla extract and mix until combined. With mixer on low, gradually add in dry ingredients and mix just until combine. Transfer dough to an airtight container and refrigerate 2 - 3 hours.

When ready to bake, preheat oven to 375 degrees.

Using a cookie scoop, drop dough balls onto a cookie sheet lined with parchment paper or a baking mat. Dust tops with a little flour, then using your hands or the bottom of a large measuring cup flatten balls into rounds, about 1/3-inch thick. Bake in preheated oven 8 - 10 minutes - cookies should still be soft to the touch and NOT brown around the edges. Allow cookies to cool 5 minutes on baking sheet before transferring to a wire rack to cool completely.

Cool completely before frosting and sprinkles. Store in an airtight container.

For the frosting, in the bowl of a stand mixer, whip cream cheese and butter until pale and fluffy. Mix in orange extract followed by powdered sugar and blend until well combined and fluffy.
