Oatmeal Scotchies



It’s been a fun but busy weekend.  We are painting our kitchen.  And, as new homeowners, I think the kitchen was a tough room to start with.  But I could not live with the red any longer!  I promise to post pictures when it’s all done.  We have the 2nd coat to do today and then the painting is done.  I found curtains on West Elm’s website so I hope to order those tonight too. 

Best moments of painting:
  • Climbing behind the refrigerator to paint and then trying to get out without touching the walls; glad there are no pictures capturing that moment. 
  • Hanging out with Jake and doing our first big project in our home.  Oh, and his painting pants which were PJ pants with deer all over them…..

Worst moment of painting
  • Edging the corner of the 14 foot wall/corner.  YUCK!  We’re going to need a little touch up for the ceiling. 

Now to the food.  I’m excited to share this recipe.  My sister-in-law made these for Christmas and they are amazing!!!  Such good flavor.  You should give them a try. 

Oatmeal Scotchies

3/4 c butter, softened
3/4 c sugar
3/4 c light brown sugar
2 eggs
1 tsp. vanilla
1 1/4 c all purpose flour
1 tsp. Baking soda
1/2 tsp. Ground cinnamon
1/2 tsp. Salt
3 c quick oats
1 2/3 c hersheys butterscotch chips

Bake 375. Large bowl- beat butter, sugars until well blended. Add eggs & vanilla, beat well. Stir flour, b soda, cinnamon & salt. Gradually add to butter mixture besting until well blended. Stir in oats & butterscotch chips, mix well. Drop by heaping teaspoons on ungreased cookie sheet. Bake 8-10 minutes. Cool slightly on cookie sheet & then move to wire rack. Cool completely. Yields 4 dozen.
