Lucky Charms White Chocolate Cookies

Cake Mix Cookies WITH Lucky Charms and White Chips - colorful and delicious!

I've been a little off my baking game this week. I tried to make hot fudge frosted brownies...sounds delicious...but big fail. However, I may attempt again. Tried to use what I learned from my Jell-O Cookies and add the fruity goodness to an Angel Food Cake....even bigger fail.

But these cookies. Chelsea got her groove back. (Great, now I'm thinking of the movie How Stella Got Her Grove Back.) I tweaked the recipe for my favorite cake mix cookies to make this St. Patty's Day-ish colorful cookie. Chewy, crunchy, with white chocolate chips....yum.

Lucky Charms White Chocolate Cookies

2/3 cup butter-flavored shortening
1/2 cup brown sugar, firmly packed
2 eggs
1 Party Rainbow Chip, White, or Funfetti Cake Mix
1 cup Lucky Charms
1/2 cup white chocolate chip
Sprinkles (optional)

Preheat oven to 350 degrees.  Lightly grease cookies sheets or line with parchment paper. 

Combine shortening and brown sugar with a hand mixer or fork.  Stir in eggs one at a time.  Add in cake mix and combine well.  Stir in cereal and white chips.

Use a cookie scoop or tablespoon to drop dough onto cookie sheet. Top with multi-color sprinkles for a little more color (optional).

Bake 9 to 12 minutes or until light golden brown around edges. Do NOT over bake; cookies will be too dry/hard.  Cool 2-3 minutes on cookie sheet.  Remove cookies and place on nonstick rack to cool. 

Makes about 2 ½ dozen cookies.
