Jell-O Flavored Sugar Cookies

Jell-O Flavored Sugar Cookies - super easy and fun to make! @whatchamakinnow

Oh hey, are you new here? I hope you'll connect with me on Facebook, Twitter, email, or another option over there on the right.

My friend Julie had a birthday last week. I try to get a recipe request and bake something special for birthday peeps if possible. She requested these colorful Jell-O cookies. I was super excited with her choice because a) it was a new recipe so it was blog-able and b) it looked super fun to make.

I'm a firm believer that adults can have fun too and act like kids. The source of this recipe (I Heart Nap Time) referenced having your kids play with the dough like play-dough before baking. Kid-smid - I was all over letting out some of the days stress and mixing up the dough. Down right therapeutic. :)

I already want to make these cookies again, but maybe do some color mixing. Maybe tie-die cookies?

The cookies themselves were delicious! They each had a little different fruity flavor that wasn't over-powering but enough that you knew the flavor. My favorite was the strawberry and orange, but really you can't go wrong in my book.

Jell-O Flavored Sugar Cookies

3 1/2 cups flour
1 tsp baking powder
1 1/2 cups butter, softened
1 cup sugar
1 egg
1 tsp vanilla
4 (3 oz) packages of Jell-O (Any flavor)
extra sugar for rolling
Wilton Color Gels for richer color (optional)

Preheat oven to 350 degrees. Line cookie sheets with parchment paper and set aside. Whisk together the flour and baking powder in a bowl and set aside.

In a large bowl, mix butter until creamy. Add sugar and beat until light and fluffy (couple minutes). Add the egg and vanilla and mix.

Gradually add the flour mix to butter/sugar. You may need to use your hands to fully incorporate. Divide dough into 4 sections and place each section in a separate bowl.

Add 2 tablespoons of the Jell-o powder onto each section. Knead into the dough section. To deepen the color, add a few drops of food coloring or color gels.

Once dough is fully colored and mixed, roll dough into an even rope. (I didn't need to flour the surface; dough was easy to work with.) Cut dough in half, then each section in half again, until dough is in all equal chunks.

Shape dough into balls, roll in sugar (or leftover Jell-O), place on baking sheet, and lightly flatten with bottom of cup.

Bake 8 to 10 minutes. Let sit on cooling rack for a couple minutes before transferring to a cooling rack.

Store in an airtight container.

Makes about 4 dozen cookies, 12 of each flavor.
