Crock-Pot Cheesy Potato Soup

Our local grocery store had 10 pound bags of potatoes on sale for $1.00. That is cheap. That is also A LOT of potatoes for 2 people. But we figured if we even used 1/2 of them we definitely would get our monies worth.

Enter potato soup.

This is the perfect time of year for soup. And soup made in a crock pot is even better; little fuss and house smells yummy all day. We loved this cheesy potato soup! The soup alone had great flavor but adding the garnish of bacon, onion, and cheese took it up like 5 notches. We will be making this soup again, for sure.

Crock-Pot Cheesy Potato Soup

5-6 potatoes, peeled and cut in chunks (at least 32 oz)
1/2 cup chopped onions (fresh or frozen)
1/2 cup chopped celery
1 cup ham chunks
30 to 32 oz chicken broth (depending on can size)
1 cup water
3 TBSP all-purpose flour
1 cup milk
2 cups shredded cheddar cheese

Garnish 
1/4 cup bacon pieces
1/4 cup green onions, sliced
shredded cheese
salt and pepper to taste

Pour chicken broth and water into crock pot. Add chopped potatoes, onion, celery, and ham. Stir. Cover and cook on low for 5 to 6 hours.


After 5 to 6 hours, mix flour and milk in a small bowl; stir into the potato mixture. Increase heat setting to High. Cover; cook 20 to 30 minutes or until mixture thickens.

Stir in cheese until melted. Turn temperature to low or warm.

Serve soup in bread bowls or soup bowls. Garnish individual servings with bacon, green onions, and a sprinkle of cheese. Add salt and pepper if desired.
Makes 6 plus servings.
